Sweet Challenge for Hotel’s Senegal Star Chef

Wolfscastle Country Hotel head pastry chef Yousoupha Dias will be competing in the World Pastry, Ice Cream and Chocolate Championship in Rome this autumn.

Yousoupha began his career at 18, working in his home country of Senegal. Moving to the UK at the age of 20, he worked at various locations before finding his way to Pembrokeshire.

Hotel owner Andy Stirling has praised the desserts created by this young man and described him as an asset to the business.

The competition, which has a high reputation in the culinary world, will bring together the very best chefs, and Youssoupha will apparently be employing his expertise in chocolate creations.
